Broccoli Soup with Leeks and Thyme
serves 4
Ingredients
- 3 T butter
- 3 C leeks (white and pale-green parts), chopped
- 6 t fresh thyme, chopped
- 1 1/4 lb broccoli crowns, chopped (about 8 C)
- 4 C chicken broth
- 1/2 lb smoked ham, bite-size cubes
Instructions
- In a soup pot, saute the leeks and thyme in butter until softened. Add the broccoli and broth and boil covered until the vegetables are tender.
- Puree the soup in a blender until smooth.
- Return the soup to the pot, adjust the seasoning, add the ham to warm, and serve.
